We've had so much fun creating new recipes.
This one was made because we had some left over veggies that needed to be used up: Spicy Sweet Chickpea Chicken!
And this one was because we needed to use salmon, but I didn't want to make our "normal salmon dish." We made Salmon Casserole instead!
We did use "regular cow cheese" because we didn't have our soy cheese available. But really, the cheese isn't super necessary anyway, it's mostly to keep everything together. |
So we did have to eat it with lactase enzymes... |
And because of this nice weather, some times it's nice just to grill a bunch of veggies with a meat.
Shrimp, green pepper, yellow squash, potatoes grilled on a kabob. |
We also invested in this nifty spiralizer to make "zoodles."
They're really yummy, AND you're eating your veggies! We boiled the noodles for 3-4 minutes to make them taste like normal noodles.
We've also enjoyed going outside more. We strolled around Red Butte Gardens.
Finally spring is beginning!
And Taylor started practicing wood carving.
Only casualty was his thumb...
And this little duck joined our decor family.
Easter decor!
And how I've been wrapping my hand at night...Makeshift splint of empty tylenol bottle and coban!
